You can't change where replays are saved by default.

I'd recommend you putting your existing replays in the "my replays" folder if you want one place for them to exist now. You can always make new folders and sub folders if you want to organize them later. For the initial save though, it will go to the "my replays" folder. You'll have to organize where you want them to go after they're in there.
