not really, in uke's initial position the only joints that have that happen to them are the elbows, knees and wrists. the rest are just in between the minimum and maximum sorta.

on theory, dming a joint should be easier when it's held, but tb physics don't really work like that. since the time in toribash goes by frames and not actual time, if you gather enough speed you can actually penetrate inside uke's joints from one frame to another and the impact will only register after the second frame. because of that, you can't really compare hitting uke when it's held to hitting a block of wood, it's more like hitting a block of wood from the block's inside. when you're hitting something in that (weird) manner, it doesn't matter if you're hitting a block of wood or rubber, the force and damage would be the same (since it's from the inside and it would "rip" both materials apart instead of having the damage just be from the superficial hit(if you were to hit the surface of the rubber the waves of force would refract everywhere and adapt to them, taking the hit without that much damage)). so if the damage is the same for both, wouldn't then it be the same to dm joints when they're relaxed or held? well, relaxed joints are also prone to stretching, and that's what (I think) makes them easier to dm.
