So to sum almost everything up, it doesn't make a difference as to whether or not uke is held or relaxed. It just depends on what you are doing. If a joint is stretched to it's limit it should be easier to dm. Doing this should be easier while the body is relaxed since they are prone to stretching. If I got anything wrong tell me so I can understand it a little better.
And pusga, your reply made perfect sense to me. 
i guess thats it, but you gotta get a feel for it. like noob said, its situational and depends on position, penetration (if you manage to hit the very surface of one of ukes joints then it might be easier to break while held) and all that gibberish. just make lots of replays and you will eventually form your own opinion based on experience
