I once lived in New Orleans for five years, the food is spot on.. Especially in New Orleans, the heart of Louisiana cuisine. Mm. My favorite dish and one of my favorite foods overall is red beans and rice. So simple, but there's so much flavor. My grandpa can make a killer RBnR. He let's the beans soak in pork fat and other flavors in a crock pot.

I live in Florida now, and there's this little restaurant about 30 minutes from where I live called the Zydeco Cafe.. Damn, I never thought I'd eat authentic Louisiana food anywhere that wasn't Louisiana. It was so good. I ordered jambalaya, but I had a bite of my dad's muffuletta too. So good. To die for, really. If I were on death row, Cajun cuisine just might be my final meal.
