I got my second dan yesterday. I also got the sensei and legacy achievements. ;o

Essentially the cone that holds the snow has a spring at the bottom so that when you stuff snow into it and freeze the snow to the sides of the cone it stays still. So when you're eating it, the snow will eventually melt enough to release from the side of the cone and in return releasing the spring launching the frozen ball of ice into your face. That's the surprise.
